Pancakes That Rock!

A long time ago, I made my first batch of home made, from scratch pancakes ever.
And we HATED them.
They tasted like... water or something, I dunno, they were pretty tasteless and flat.
But not one to like feeling defeated in the kitchen, I decided that giving it one more try would be a good idea.  And so I did.  And what do you know- I had found a recipe for the best ever fluffy pancakes around!

To begin with, I could tell that my pancakes would fluffinize because the recipe called for what I call 'in a pinch' butter milk, that is, warmed milk with vinegar or lemon juice added to make it curdle, as well as baking soda later on down the recipe.

I thought that this would be a great time to try sneaking in whole wheat flour on the family.  I've got some members that will flat out refuse to eat anything that has 'wheat' in the name.  So, I don't tell them that it's in there until they've taken several bites, loved it, and it's too late to turn back lol.

Notice how in this first picture, how while my batter is lumpy, there isn't much going on in it.
(don't mind the pickle, he's just there for moral support)
The recipe calls for the batter to sit for a while (as do others- and if not, it's always  a good idea to give your batter a resting period to allow it to get going and get yo fluffinating)

Here, you see a few small bubbles.  This means that my pancakes are gonna fluff up it's ready to go!

They're still bubbling and look how fluffy they get once they hit the hot pan- 
These are gonna be so good!

(Now this is how I love them- kinda deep fried with the crispy edge... Heaaaaaven in a pancake right there!)

He loves them, of course!


Check out how fluffy those bad boys are- even with the whole wheat flour in there.


I hope that you will give this recipe a try- you may just wind up loving it as much as I do!

These sound so good, printed our the recipe and will try these next time I make pancakes. I love how you sneak in the wheat...I sneak a lot of things into my cooking too :)

Awesome! Tell me how you like it. I want to try and tweak the recipe when I have time to be fruity pancakes or even more healthy. I've got to look and see where I might put some fruit puree in there. Pumpkin, zucchini- maybe even cauliflower!
